Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 4 item
  • chopped pecans - 1 c
  • nutmeg - 1/4 tsp
  • self-rising flour - 3 c
  • cooking oil
  • raisins - 1 c
  • cooked and mashed sweet potatoes - 1 c

How to make sweet potato muffins:

Put raisins and nuts in boiling water for 5 minutes. Drain. Mix all ingredients. Fill greased or paper lined muffin tins 2/3 full. Bake for 20 minutes at 350°. Can bake in tube pan for 1 hour or loaf pan. Makes 26 muffins.
