Sweet potato muffins
Ingredients/Components
- sugar - 1/2 c
- cinnamon - 1/2 tsp
- vanilla - 1 tsp
- chopped pecans - 4 Tbsp
- milk - 1/2 c
- salt - 1/2 tsp
- flour - 3/4 c
- butter - 4 Tbsp
- nutmeg - 1/4 tsp
- baking powder - 2 tsp
- egg - 1 item
- chopped raisins - 4 Tbsp
- sweet potatoes, cooked - 2/3 c
How to make sweet potato muffins:
Cream butter, egg and sugar in large bowl; add potatoes. Combine flour, baking powder, salt, cinnamon and nutmeg in small bowl. Add alternately by hand with milk to potato mixture until blended. Add remaining ingredients and fill muffin cups 2/3 full. Sprinkle with cinnamon sugar and bake at 400° for 25 minutes.Recipe categories: Breads, Quick breads, Muffins.
