  • sugar - 3 c
  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • chopped pecans - 1/3 c
  • milk - 1/4 c
  • vanilla extract - 1 Tbsp
  • butter or margarine - 1 c
  • salt - 1/2 tsp
  • flour - 1 c
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • pumpkin - 1 c
  • vegetable oil - 1/2 c
  • egg - 1 item
  • margarine or butter, softened - 1/4 c
  • firmly packed brown sugar - 3/4 c
  • Quaker oats
  • 8 sq - 1 pkg

How to make pumpkin pecan muffins:

Melt chocolate and butter in a saucepan on very low heat, stirring constantly. Cool.

Meanwhile, beat eggs, sugar and vanilla extract in a large mixing bowl on high speed for 10 minutes. Blend in chocolate mixture on low speed. Add flour, beating just to blend. Fold in any optional ingredients or leave plain. Spread mixture into a 9 x 13-inch pan sprayed with nonstick cooking spray. Bake in a preheated 350° oven for 35 to 40 minutes. Do not overbake! Cool and cut into squares. These brownies are very rich, so you may want to cut them into smaller pieces. To make 3 layer brownies, use the following layers.
