Ingredients/Components
- sugar - 1 c
- vanilla - 1 Tbsp
- chopped pecans - 1 c
- milk - 1/3 c
- butter or margarine - 2 Tbsp
- salt - 1 tsp
- flour - 2 Tbsp
- butter - 1/4 c
- eggs, beaten - 3 item
- baking powder - 1/2 tsp
- self-rising flour - 1/2 c
- light brown sugar
- white pepper to taste - 1 item
- sweet potatoes, cooked and mashed - 3 c
- bread crumbs to taste - 1 item
- corn whole kernel *
How to make sweet potato casserole:
Topping:1 c. light brown sugar1/2 c. self-rising flour1/3 c. butter1 c. chopped pecans2 1/2 c. corn (whole kernel) *2 Tbsp. flour1 Tbsp. sugar1/2 tsp. baking powder1 tsp. salt1 1/2 c. milk2 eggs, beaten2 Tbsp. butter or margarine bread crumbs to taste white pepper to taste *My Stepdad takes the corn off the cob and freezes it; this is normally what he uses, but the recipe may be used with cans of corn.Spray baking dish with Pam. Pour corn into dish. Mix beaten eggs and milk. Add dry ingredients to milk mixture. Pour over corn and blend together. Dot top of corn with butter/margarine. Sprinkle bread crumbs over top. Bake for 1 hour at 325°. Serves 4 to 6.
