  • sugar
  • vinegar - 2 qt
  • celery seed - 2 oz
  • whole allspice - 2 oz
  • pickles - 11 lb
  • pieces alum, size of walnut - 2 item
  • cinnamon buds - 2 oz

How to make sweet pickles:

Syrup:4 lb. sugar2 qt. vinegar2 oz. whole allspice2 oz. cinnamon buds2 oz. celery seed Soak pickles in salt water (strong enough to hold up an egg) for three days. Then change water for three mornings. Then split pickles lengthwise or slice and put in pan big enough to cover with water. Add alum and simmer for 3 hours. Drain. Put pickles in jars and cover with syrup. Boil ingredients in syrup together for 3 minutes. Pour over pickles and seal.
