Sweet pickles
Ingredients/Components
- sugar
- cinnamon
- vinegar - 4 pt
- allspice - 1/2 oz
- plus 2 tsp - 2 Tbsp
- celery seed - 2 tsp
- whole cloves - 1/2 oz
- pickles - 200 item
- canning salt
How to make sweet pickles:
Wash pickles; place in crock and pour cold water and canning salt to cover. Weight down and let stand 1 week.8th Day: Drain brine; wash pickles well. Cover with 1 1/2 gallons boiling water and powdered alum.
9th Day: Drain; cover with boiling water.
10th Day: Drain, cut lengthwise and lay cut side on towels to dry. Have each half dry to keep from shrinking. Very important.
Cook vinegar (dilute if too strong), 13 1/2 cups sugar, cinnamon, cloves, allspice and celery seed for 15 minutes. Pour over pickles. Place spices in a small cloth bag.
11th Day: Drain and add 2/3 cup sugar; bring to a boil and pour over pickles.
12th Day: Drain vinegar and add 2/3 cup sugar. Bring to a boil and pour over pickles, that have been placed in jars. Seal.
