Summertime potato salad
Ingredients/Components
- sour cream - 1/3 c
- water - 1 item
- pepper - 1/2 tsp
- prepared horseradish - 1 Tbsp
- soy sauce - 2 Tbsp
- parsley flakes - 2 Tbsp
- mayonnaise - 1/3 c
- minced onions - 1/2 c
- fresh peach slices - 1 item
- long white or red potatoes - 2 lb
- hard-cooked eggs, peeled and cut into wedges - 4 item
How to make summertime potato salad:
Peel potatoes; cut into 3/4-inch cubes. Bring water to a boil; add potatoes. Return to a boil; cook about 6 minutes or until tender, being careful not to overcook. Drain thoroughly; transfer to a large bowl. Chill.Meanwhile, combine mayonnaise, sour cream, parsley, soy sauce, horseradish and pepper. Add to potatoes with egg and onions; toss gently to mix well. Refrigerate about 3 hours for flavors to blend or until chilled.
To serve, spoon salad into serving bowl; arrange peach slices around edge of salad. Makes 6 to 8 servings.
