Ingredients/Components

  • sour cream - 1/3 c
  • water - 1 item
  • pepper - 1/2 tsp
  • prepared horseradish - 1 Tbsp
  • soy sauce - 2 Tbsp
  • parsley flakes - 2 Tbsp
  • mayonnaise - 1/3 c
  • minced onions - 1/2 c
  • fresh peach slices - 1 item
  • long white or red potatoes - 2 lb
  • hard-cooked eggs, peeled and cut into wedges - 4 item

How to make summertime potato salad:

Peel potatoes; cut into 3/4-inch cubes. Bring water to a boil; add potatoes. Return to a boil; cook about 6 minutes or until tender, being careful not to overcook. Drain thoroughly; transfer to a large bowl. Chill.

Meanwhile, combine mayonnaise, sour cream, parsley, soy sauce, horseradish and pepper. Add to potatoes with egg and onions; toss gently to mix well. Refrigerate about 3 hours for flavors to blend or until chilled.

To serve, spoon salad into serving bowl; arrange peach slices around edge of salad. Makes 6 to 8 servings.
