Summer sausage
Ingredients/Components
- sugar - 1 tsp
- water
- dry mustard - 1 tsp
- garlic powder - 1/2 tsp
- soy sauce - 2/3 c
- oregano - 1 Tbsp
- onion powder - 1 tsp
- liquid smoke - 1 Tbsp
- ground beef lean - 4 lb
- curing salt - 4 Tbsp
How to make summer sausage:
Mix all ingredients well. Form into roll and wrap in aluminum foil. Refrigerate 24 hours. Bake at 300° for 1 hour, then turn oven to 450° for 15 more minutes.This was designed to take on hikes and requires no refrigeration for several days.
Note: Sausage can be made more spicy by adding 1 teaspoon pepper, 1 teaspoon sage and 1/2 teaspoon Worcestershire sauce.
