Ingredients/Components

  • sugar - 1 tsp
  • water
  • dry mustard - 1 tsp
  • garlic powder - 1/2 tsp
  • soy sauce - 2/3 c
  • oregano - 1 Tbsp
  • onion powder - 1 tsp
  • liquid smoke - 1 Tbsp
  • ground beef lean - 4 lb
  • curing salt - 4 Tbsp

How to make summer sausage:

Mix all ingredients well. Form into roll and wrap in aluminum foil. Refrigerate 24 hours. Bake at 300° for 1 hour, then turn oven to 450° for 15 more minutes.

This was designed to take on hikes and requires no refrigeration for several days.

Note: Sausage can be made more spicy by adding 1 teaspoon pepper, 1 teaspoon sage and 1/2 teaspoon Worcestershire sauce.
