Ingredients/Components
- avocados 1/2 per person - 2 item
- chopped green pepper - 2 Tbsp
- chopped green onion - 2 Tbsp
- black olives, pitted and chopped - 6 item
- Vinaigrette Dressing: salt and pepper
- white wine vinegar
- oil - 5 Tbsp
- lemon juice to taste - 1 item
- chopped parsley - 1 tsp
- watercress for garnish - 1 item
How to make avocado salad:
Blanch chopped pepper; boil in water for 1 minute, rinsing in cold water.Vinaigrette Dressing: salt and pepper1 1/2 Tbsp. white wine vinegar5 Tbsp. oil lemon juice to taste1 tsp. chopped parsley watercress (for garnish) Vinaigrette Dressing: Make dressing; chill.Cut avocados in halves lengthwise. Remove seeds. Brush with lemon juice. Fill each cavity with dressing. Chill avocados slightly before serving on individual plates. Garnish with watercress.
