Stuffed zucchini
Ingredients/Components
- stick margarine - 1/2 item
- shredded Mozzarella cheese - 1/2 c
- medium onion, chopped - 1 item
- medium zucchini - 3 item
- small green pepper, chopped - 1 item
- herb seasoned stuffing mix - 1 c
- jar diced pimientos, drained optional - 1 oz
How to make stuffed zucchini:
Heat 2 inches of water to boil. Add zucchini. Cover; heat to boiling. Cook 8 to 10 minutes or until tender; drain. Cool slightly. Cut zucchini lengthwise in half. Spoon out pulp; chop pulp coarsely. Place zucchini shells, cut sides up, in ungreased rectangular baking dish.Heat oven to 350°. Cook onion in margarine in 10-inch skillet until tender, stirring frequently. Stir in chopped pulp, bell pepper, pimientos and stuffing. Divide mixture into shells. Sprinkle with cheese. Bake, uncovered, for 25 to 30 minutes or until stuffing is hot and cheese melted.
