How to make stuffed mushrooms:

Wipe mushrooms and pull out the stems. Chop stems finely. Heat butter in frying pan and lightly brown the rounded sides of mushroom caps a few at a time. Set aside.

Add chopped mushroom stems, celery, onion and walnuts to the pan and fry quickly for 2 to 3 minutes. Remove from heat and stir in the bread crumbs, parsley, lemon juice, salt and pepper. Bind with the beaten egg. Spoon into mushroom caps and place side by side in a shallow baking dish in which they just fit. Pour only enough stock around the sides to reach 1/2 to 3/4 way up mushroom cap. Sprinkle each with a little Cheddar, if desired. Bake at 350° for 20 to 25 minutes.
