Stuffed mushrooms
Ingredients/Components
- finely chopped walnuts - 2 oz
- lemon juice - 2 Tbsp
- egg, beaten - 1 item
- chopped fresh parsley - 4 Tbsp
- total - 12 large
- bread crumbs - 1/4 c
- small onion, finely chopped - 1 item
- chicken stock - 6 Tbsp
- salt and fresh ground pepper to taste - 1 item
- grated Cheddar optional - 2 oz
- sticks celery, finely chopped - 4 item
How to make stuffed mushrooms:
Wipe mushrooms and pull out the stems. Chop stems finely. Heat butter in frying pan and lightly brown the rounded sides of mushroom caps a few at a time. Set aside.Add chopped mushroom stems, celery, onion and walnuts to the pan and fry quickly for 2 to 3 minutes. Remove from heat and stir in the bread crumbs, parsley, lemon juice, salt and pepper. Bind with the beaten egg. Spoon into mushroom caps and place side by side in a shallow baking dish in which they just fit. Pour only enough stock around the sides to reach 1/2 to 3/4 way up mushroom cap. Sprinkle each with a little Cheddar, if desired. Bake at 350° for 20 to 25 minutes.
