Spinach salad
Ingredients/Components
- lemon juice
- Dijon mustard - 1 Tbsp
- salt and pepper - 1/2 tsp
- pine nuts - 2 Tbsp
- olive oil - 6 Tbsp
- croutons - 1 c
- cloves garlic, mashed - 2 item
- Swiss cheese, grated - 3/4 c
- bag spinach - 1 item
- anchovy paste - 1 tsp
- large tomato, cut into 4 wedges - 1 item
How to make spinach salad:
Dressing:2 Tbsp. lemon juice6 Tbsp. olive oil1 tsp. anchovy paste1 Tbsp. Dijon mustard2 cloves garlic, mashed In large bowl, wash and dry thoroughly your spinach. Tear leaves into bite size pieces.Dressing: Mix lemon juice and olive oil together. Mash together the anchovy paste, Dijon mustard and mashed garlic. Add mixture to the lemon juice-olive oil mixture. Add salt and pepper.
Just before serving, toss spinach leaves. Add croutons and Swiss cheese. Add as much of the dressing as desired. Place the dressed salad on serving plates. Garnish each plate with pine nuts and a wedge of tomato. Makes 4 servings.
