Ingredients/Components

  • cornstarch - 1 Tbsp
  • water - 3/4 c
  • ground ginger - 1/2 tsp
  • paprika - 1 tsp
  • clove garlic, minced - 1 item
  • sliced green onion - 1 c
  • soy sauce
  • salt and pepper to taste - 1 item
  • beef chuck or round steak, fat trimmed
  • diced fresh tomato - 1 c
  • finely sliced celery - 1 c
  • salad oil, divided - 1/3 c
  • sliced red, green and/or yellow pepper

How to make spicy pepper steak:

Marinade:1/3 c. soy sauce1 clove garlic, minced1 tsp. paprika1/2 tsp. ground ginger1/3 c. salad oil, divided1 1/2 c. sliced red, green and/or yellow pepper1 c. finely sliced celery1 c. sliced green onion1 Tbsp. cornstarch3/4 c. water salt and pepper to taste1 c. diced fresh tomato With sharp knife, cut steak into thin strips. Combine soy sauce, garlic, paprika, ginger and 1/4 cup oil. Add beef, toss to blend. Let stand 30 minutes at room temperature. Drain, save marinade. In meantime, prepare vegetables in a heavy frying pan or wok heating remaining oil. Add beef. Toss over high heat until evenly browned. (If wanted tender, add a little water and for 15 to 20 minutes.)

Remove meat. Add vegetables, except tomatoes to pan. Turn heat up. Toss until tender crisp, about 10 minutes. Add meat to pan. Mix cornstarch to water. Add to pan. Stir and cook until thickened. Add tomatoes. Serve with rice or noodles. Makes 4 servings.
