Spicy chicken and rice
Ingredients/Components
- cloves garlic, minced - 2 item
- dried basil, crushed
- chicken broth
- hot pepper sauce - 1/4 tsp
- fresh basil leaves - 1 item
- regular long grain rice, uncooked - 3/4 c
- peas frozen or canned - 1 c
- can unsalted stewed tomatoes, cut up - 1 oz
- each cans chunk white chicken, undrained - 2 oz
- sweet red pepper rings - 1 item
How to make spicy chicken and rice:
In a large saucepan, heat chicken broth, tomatoes, garlic and dried basil to boiling. Add rice. Reduce heat to low. Cover and simmer 20 minutes. Add undrained chicken, peas and hot pepper sauce. Cover and simmer 5 minutes, stirring occasionally. Remove from heat. Let stand, covered, 5 minutes. Garnish with basil leaves and red pepper rings.
