Ingredients/Components

  • water - 3 c
  • clove garlic, minced - 1 item
  • chopped onion - 1 c
  • celery, chopped - 1 c
  • uncooked rice - 1/2 c
  • beef bouillon cubes - 2 item
  • cans black-eyed peas, drained - 2 1/2
  • slices bacon, fried crisp and crumbled - 5 item
  • carrots, cubed - 1 c
  • can Ro-Tel tomatoes with chilies - 1 item
  • cans black-eyes with jalapenos, drained - 2 1/2

How to make spicy black-eyed pea soup:

Combine first 7 ingredients with water and bouillon cubes. Bring to a boil. Reduce heat and simmer 30 minutes. Add rice and simmer until rice is done. Add bacon last. Serve warm.
