Spicy black-eyed pea soup
Ingredients/Components
- water - 3 c
- clove garlic, minced - 1 item
- chopped onion - 1 c
- celery, chopped - 1 c
- uncooked rice - 1/2 c
- beef bouillon cubes - 2 item
- cans black-eyed peas, drained - 2 1/2
- slices bacon, fried crisp and crumbled - 5 item
- carrots, cubed - 1 c
- can Ro-Tel tomatoes with chilies - 1 item
- cans black-eyes with jalapenos, drained - 2 1/2
How to make spicy black-eyed pea soup:
Combine first 7 ingredients with water and bouillon cubes. Bring to a boil. Reduce heat and simmer 30 minutes. Add rice and simmer until rice is done. Add bacon last. Serve warm.Recipe categories: Soups & stews, Beans, Comfort food.
