Spiced zucchini bread
Ingredients/Components
- sugar - 2 c
- cinnamon
- vanilla - 2 tsp
- salt - 1 tsp
- baking powder - 1/2 tsp
- baking soda - 2 tsp
- vegetable oil - 1 c
- all-purpose flour - 3 c
- chopped walnuts - 3/4 c
- can crushed pineapple, drained - 1 oz
- shredded zucchini - 2 c
How to make spiced zucchini bread:
Beat eggs lightly in a large mixing bowl. Add sugar, oil and vanilla. Beat until creamy. In another bowl combine flour, baking soda, salt, baking powder, cinnamon and nuts; set aside. Add zucchini and pineapple to egg and sugar mixture. Add dry ingredients, stirring only until dry ingredients are moistened. Spoon batter into 2 well-greased loaf pans.
