Ingredients/Components

  • sugar - 2 c
  • cinnamon
  • eggs - 3 item
  • vanilla - 2 tsp
  • chopped pecans - 1 c
  • salt - 1 tsp
  • soda - 2 tsp
  • baking powder - 1 tsp
  • vegetable oil - 1 c
  • all-purpose flour - 3 c
  • can crushed pineapple, drained - 1 oz
  • shredded zucchini - 2 c

How to make spiced zucchini bread:

Combine first six ingredients and set aside. Beat eggs lightly; add sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple. Add dry ingredients and stir only until moistened. Pour into two well-greased and floured 9 x 5 x 3-inch loaf pans. Bake at 350° for 1 hour or until done. Cool 10 minutes before removing from pan.
