Spiced zucchini bread
Ingredients/Components
- sugar - 2 c
- cinnamon
- eggs - 3 item
- vanilla - 2 tsp
- chopped pecans - 1 c
- salt - 1 tsp
- soda - 2 tsp
- baking powder - 1 tsp
- vegetable oil - 1 c
- all-purpose flour - 3 c
- can crushed pineapple, drained - 1 oz
- shredded zucchini - 2 c
How to make spiced zucchini bread:
Combine first six ingredients and set aside. Beat eggs lightly; add sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple. Add dry ingredients and stir only until moistened. Pour into two well-greased and floured 9 x 5 x 3-inch loaf pans. Bake at 350° for 1 hour or until done. Cool 10 minutes before removing from pan.In honor of Lula White.
