Ingredients/Components

  • pkg - 1 oz
  • salt - 1 tsp
  • all-purpose flour - 1/4 c
  • clove garlic, minced - 1 item
  • chicken broth
  • ground saffron - 1/4 tsp
  • dash of pepper - 1 item
  • olive oil - 1/4 c
  • chopped celery with leaves - 1/2 c
  • carrots, sliced - 2 item
  • chopped pimientos - 1/4 c
  • regular rice - 2/3 c
  • medium onions, quartered - 2 item
  • fresh or frozen shelled shrimp - 12 oz
  • ready to cook chicken, cut up - 1 (2
  • crushed, dried oregano - 1/2 tsp
  • small fresh clams in shells, washed - 12 item

How to make spanish paella:

Combine flour, 1 teaspoon salt and pepper. Coat chicken with mixture. In a 4-quart Dutch oven, brown chicken, a few pieces at a time, in hot olive oil, for 20 minutes. Drain excess fat. Return chicken to pan.

Add chicken broth, onions, carrots, rice, celery, pimientos, garlic, 1/2 teaspoon salt, oregano and saffron. Simmer, covered, for 30 minutes. Add shrimp, clams and artichokes. Simmer, covered, for 15 to 20 minutes more. Serves 6 to 8.
