Ingredients/Components

  • chicken broth or bouillon - 2 c
  • regular rice - 2/3 c
  • pkg - 1 oz
  • butter or margarine - 3 Tbsp
  • all-purpose flour - 3 Tbsp
  • salt - 1/2 tsp
  • dash of pepper - 1 item
  • milk - 2 c
  • cubed, cooked chicken or turkey - 2 c
  • jar sliced mushrooms, drained - 1 1/2
  • toasted, slivered almonds - 1/4 c

How to make chicken casserole:

In a saucepan, bring chicken broth and rice to a boil. Reduce heat. Cook, covered, for 15 minutes. Remove from heat; let stand, covered, for 10 minutes. Meanwhile, cook broccoli according to package directions; drain.

In a saucepan, melt butter or margarine. Stir in flour, salt and pepper. Add milk all at once. Cook and stir until thickened and bubbly. Stir in chicken, cooked rice, drained broccoli and mushrooms. Turn into a 2-quart casserole. Bake, covered, at 350° until heated through, 30 to 35 minutes. Sprinkle with almonds. Makes 6 servings.
