Ingredients/Components

  • sugar - 1/2 c
  • vanilla - 1 item
  • salt - 1 item
  • cornstarch - 1/2 tsp
  • cold water - 1/4 c
  • hot water - 1 c
  • egg white - 1 item
  • juice of 1 lemon
  • scalded milk - 1 c
  • envelope plain gelatin - 1 item
  • Custard Sauce:1 egg yolk

How to make snow pudding:

Custard Sauce:1 egg yolk1 c. scalded milk vanilla salt1/4 c. sugar1/2 tsp. cornstarch Soak gelatin in cold water 5 minutes. Add boiling water and stir until dissolved. Add strained lemon juice and chill until it begins to harden. Beat white of egg and add together to the slightly hardened mixture. Beat all together until spongy. Chill. Serve with Custard Sauce.

Custard Sauce: Beat together yolk of egg, sugar and cornstarch. Fold into scalded milk and cook slowly until thickened. Flavor with vanilla and a pinch of salt. (I always double amount of sauce.)
