Ingredients/Components

  • sugar - 1/2 c
  • vanilla - 1/2 tsp
  • milk - 6 Tbsp
  • cornstarch - 2 Tbsp
  • almond extract - 1/2 tsp
  • egg - 1 item
  • shortening - 1/4 c
  • dash of salt - 1 item
  • self-rising flour - 1 c
  • red food coloring - 1 item
  • 303 can pie cherries 2 c
  • liquid cherry juice and water - 1 c

How to make snack cake:

Topping:1 (No. 303) can pie cherries (2 c.), drained1 c. liquid (cherry juice and water)1/2 c. sugar2 Tbsp. cornstarch1/2 tsp. almond extract dash of salt red food coloring Snack Cake: Cream shortening and sugar well. Add egg and vanilla extract and beat thoroughly. Alternately add flour and milk, beating after each addition. Bake in greased and floured pan for 25 minutes at 350°. Cool.

Topping: Heat liquid in saucepan. Stir in sugar, cornstarch and salt, which have been mixed together. Cook until the mixture is smooth and thickened, stirring constantly. Add a few drops of red food coloring, almond extract and cherries. Cool slightly, spread over cake and serve with whipped cream or ice cream.

Note: Other fruit may be used instead of cherries. If using fresh fruit, cook fruit until done (with sugar and water), then proceed as instructed.
