Shrimp scampi
Ingredients/Components
- butter - 1/3 c
- salt and pepper - 1 item
- olive oil - 1/4 c
- minced parsley - 1/4 c
- jumbo shrimp - 3 lb
- cooking sherry - 1/4 c
- to 3 cloves garlic, crushed - 2 item
How to make shrimp scampi:
Devein and shell shrimp. Pat dry. Heat oil in large skillet. Add shrimp and cook 3 minutes over medium heat, stirring frequently. Sprinkle with salt and pepper. Add butter, garlic, sherry and parsley. Cook 4 minutes longer, stirring constantly. (May add a bottle of clam juice if more broth is desired.) Serve with rice or crusty Italian bread to soak up broth. Serves 4 to 6.Recipe categories: Main dish, Shellfish, Shrimp.
