Shrimp salad
Ingredients/Components
- water - 5 c
- fresh snow peas - 2 c
- cooked medium shrimp, peeled and deveined - 1 lb
- cooked brown rice - 2 c
- medium red onion, diced - 1 item
- medium sweet red pepper, diced - 1 item
- fresh minced parsley - 1/3 c
- lemon juice - 2 Tbsp
- soy sauce - 1 Tbsp
- canola oil - 1 Tbsp
- sesame oil - 2 Tbsp
- ground ginger - 1/2 tsp
- minced garlic clove - 1 item
How to make shrimp salad:
In a saucepan, bring water to a boil; add peas, cover and cook for 2 minutes. Drain. Place peas in ice water; drain and pat dry. In a large bowl, combine shrimp, rice, onion, red pepper, parsley and snow peas. In a small jar, combine lemon juice, soy sauce, canola oil, sesame oil, ginger and garlic.
