  • water - 5 c
  • fresh snow peas - 2 c
  • cooked medium shrimp, peeled and deveined - 1 lb
  • cooked brown rice - 2 c
  • medium red onion, diced - 1 item
  • medium sweet red pepper, diced - 1 item
  • fresh minced parsley - 1/3 c
  • lemon juice - 2 Tbsp
  • soy sauce - 1 Tbsp
  • canola oil - 1 Tbsp
  • sesame oil - 2 Tbsp
  • ground ginger - 1/2 tsp
  • minced garlic clove - 1 item

How to make shrimp salad:

In a saucepan, bring water to a boil; add peas, cover and cook for 2 minutes. Drain. Place peas in ice water; drain and pat dry. In a large bowl, combine shrimp, rice, onion, red pepper, parsley and snow peas. In a small jar, combine lemon juice, soy sauce, canola oil, sesame oil, ginger and garlic. Shake well and pour over shrimp mixture. Toss to coat.
