Shortbread cookies
Ingredients/Components
- vanilla extract - 1 tsp
- salt - 1/4 tsp
- confectioners sugar - 1/2 c
- baking powder - 1/4 tsp
- all-purpose flour - 2 c
- butter or margarine, softened - 1 c
How to make shortbread cookies:
Beat butter, sugar and vanilla until light and fluffy in large bowl with electric mixer at medium speed. Combine the flour, baking powder and salt in small bowl. Gradually beat flour mixture until well blended. Wrap dough in plastic wrap; flatten lightly and refrigerate for 1 1/2 to 2 hours.Heat oven to 375°. Work with 1/4 dough at a time; keep remainder refrigerated. Roll dough out to 1/2-inch thickness on lightly floured surface and cut into 2 1/2 x 1 1/2-inch rectangular or desired shapes; or mold into shapes. Place on ungreased baking sheet, spacing about 1-inch apart. Decorate as desired. Bake about 15 minutes or until very lightly brown. Cool on wire racks. Makes 3 dozen.
