Shamrock pie
Ingredients/Components
- sugar - 1 c
- butter - 1 Tbsp
- cornstarch - 1/4 c
- water
- lemon juice - 1/4 c
- grated lemon peel
- Meringue:3 egg whites
- egg yolks, lightly beaten - 3 item
- 9-inch pastry shell, baked - 1 item
- to 6 drops green food coloring - 5 item
How to make shamrock pie:
Meringue:3 egg whites1/3 c. sugar Combine sugar, cornstarch and water in a saucepan; stir until smooth. Bring to boil, stirring constantly. Boil 2 minutes or until thickened. Stir a small amount into egg yolks; return all to pan. Cook and stir 1 minute. Remove from heat; stir in lemon juice, butter, lemon peel and food coloring until smooth. Pour into crust.For meringue, beat egg whites until foamy. Gradually add sugar and beat until stiff. Spread over hot filling. Bake at 350° for 10 to 15 minutes.
