Ingredients/Components
- salt - 1/2 tsp
- pepper - 1/4 tsp
- grated Parmesan cheese - 3 Tbsp
- chicken broth
- 4 oz - 1 c
- pimientos - 1/2 c
- to 6 large potatoes, peeled and sliced - 5 item
How to make scalloped potatoes:
Combine first 3 ingredients in a Dutch oven; bring to a boil. Cover, reduce heat and simmer 5 minutes. Remove potatoes from broth, reserving broth. Layer half each of potatoes and Swiss cheese in a lightly greased 2-quart casserole; repeat layers. Pour reserved broth over top; sprinkle with Parmesan cheese, cover and bake at 350° for 55 minutes. Remove cover and bake an additional 5 minutes or until potatoes are tender. Yields 8 servings.Recipe categories: Low protein, Potato, Vegetables.
