Ingredients/Components

  • sugar - 1/2 tsp
  • eggs - 2 item
  • salt - 1/2 tsp
  • evaporated milk - 1/4 c
  • butter or margarine, melted - 1/4 c
  • shredded carrots - 1/4 c
  • chopped onion - 1 tsp
  • chopped celery - 1 Tbsp
  • chopped green pepper - 1/4 c
  • shredded cheddar cheese - 1/2 c
  • can cream style corn - 1 3/4
  • crushed saltines about 15 crackers - 1/2 c

How to make scalloped corn:

In a bowl, combine the first 11 ingredients and mix well. Transfer to a greased 1 qt. baking dish. Sprinkle with cheese. Bake uncovered at 350° for 30-35 minutes or until a knife inserted near the center comes out clean. Serves 4.
