Sauerkraut soup
Ingredients/Components
- medium potatoes, peeled and cubed - 5 item
- medium onions, chopped - 2 item
- large can tomatoes - 1 item
- each chicken broth - 3 cans
- smoked sausage, cut in 1/2 inch pieces - 1 lb
- carrots, cut in 1/4 inch slices - 2 item
- sauerkraut, rinsed, drained and cut with scissors - 1 can
How to make sauerkraut soup:
In large soup pan, combine sausage, potatoes, onion, carrots and chicken broth; bring to a boil. Reduce heat and simmer 30 minutes or until potatoes are tender. Add sauerkraut and tomatoes. Return to boil. Reduce heat and simmer 30 minutes longer. If thinner soup is desired add more broth.Three heaping tablespoons of chicken base in 2 3/4-quarts of water may be substituted for canned chicken broth.
