  • eggs - 2 item
  • lemon juice - 1 tsp
  • chopped onion - 1/4 c
  • salt and pepper to taste - 1 item
  • cracker crumbs - 2 c
  • seasoning salt - 1 item
  • can pink salmon - 1 item

How to make salmon croquettes:

In a large bowl, place salmon, removing all visible bones. Add 1 egg, onion and 1/2 cup of cracker crumbs; mix well. Add 1 egg, 1/2 cup cracker crumbs, lemon juice and seasoning, mixing well. Place remaining cup of cracker crumbs in a small bowl. Shape salmon mixture into oblong shaped patty 1/2-inch thick; roll in cracker crumbs, coating each patty well. Deep fry in shortening until golden brown.
