  • sugar - 1 c
  • vanilla - 1 tsp
  • water
  • large eggs - 4 item
  • regular rice - 1 c
  • milk can be skim or fat-free - 6 c
  • large can evaporated milk skim evaporated - 1 item

How to make rice pudding:

Simply bring milk, water and rice to a boil and boil 4 minutes (less if you cut recipe in half) or until rice is done and mixture is thick and creamy. Stir often. You can add raisins (couple hands full).

In a large bowl, mix eggs, sugar and vanilla until frothy. Add rice mixture to egg mixture and fold. Chill to enjoy.
