Ingredients/Components

• sugar
• cinnamon - 1/2 tsp
• vanilla - 1 tsp
• flour - 2 c
• soda - 1 tsp
• buttermilk - 1 c
• egg - 1 item
• shortening - 1 c
• rhubarb

How to make rhubarb coffee cake:

Topping:1/2 c. sugar1/2 tsp. cinnamon Mix first 7 ingredients together, then fold in cut-up rhubarb. Bake in greased 9 x 13-inch pan; sprinkle topping over the batter. Bake at 350° for 45 minutes. Serve warm.
