  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour - 2 c
  • brown sugar
  • soda - 1 tsp
  • buttermilk - 1 c
  • egg - 1 item
  • shortening - 1/2 c
  • rhubarb - 2 c

How to make rhubarb coffee cake:

Topping:1/2 c. brown sugar1 tsp. cinnamon Cream shortening and sugar. Add egg and vanilla. Alternate milk with dry ingredients; mix well. Cut rhubarb into small pieces; add to batter. Pour into 9 x 13-inch pan. Sprinkle top with mixture of brown sugar and cinnamon. Bake in a 325° oven for 40 to 45 minutes.
