Ingredients/Components
- cinnamon - 1 tsp
- vanilla - 1 tsp
- salt - 1 tsp
- flour - 2 c
- brown sugar
- soda - 1 tsp
- buttermilk - 1 c
- egg - 1 item
- shortening - 1/2 c
- rhubarb - 2 c
How to make rhubarb coffee cake:
Topping:1/2 c. brown sugar1 tsp. cinnamon Cream shortening and sugar. Add egg and vanilla. Alternate milk with dry ingredients; mix well. Cut rhubarb into small pieces; add to batter. Pour into 9 x 13-inch pan. Sprinkle top with mixture of brown sugar and cinnamon. Bake in a 325° oven for 40 to 45 minutes.Recipe categories: Breads, Fruit, Coffee cakes.
