Ingredients/Components
- sugar
- cinnamon - 1 tsp
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour
- soda - 1 tsp
- buttermilk - 1 c
- egg - 1 item
- shortening - 1/2 c
- chopped nuts optional - 1/3 c
- nuts, chopped - 1/3 c
- chopped rhubarb
How to make rhubarb cake:
Cream shortening, sugar and egg. Add soda, vanilla and buttermilk, then flour, salt and cinnamon. Beat well. Stir in chopped rhubarb and 1/3 cup nuts (if desired). Pour into greased 9 x 13-inch pan. Sprinkle top with mixture of 1/3 cup sugar, 1/3 cup nuts and 1 teaspoon cinnamon. Bake at 350° for 30 minutes or until done.Recipe categories: Desserts, Cakes, < 60 mins.
