Ingredients/Components

  • sugar
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour
  • soda - 1 tsp
  • buttermilk - 1 c
  • egg - 1 item
  • shortening - 1/2 c
  • chopped nuts optional - 1/3 c
  • nuts, chopped - 1/3 c
  • chopped rhubarb

How to make rhubarb cake:

Cream shortening, sugar and egg. Add soda, vanilla and buttermilk, then flour, salt and cinnamon. Beat well. Stir in chopped rhubarb and 1/3 cup nuts (if desired). Pour into greased 9 x 13-inch pan. Sprinkle top with mixture of 1/3 cup sugar, 1/3 cup nuts and 1 teaspoon cinnamon. Bake at 350° for 30 minutes or until done.
