Ingredients/Components
- sugar - 1/2 c
- cinnamon - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- butter - 1/2 c
- coconut - 1/2 c
- buttermilk - 1 c
- baking soda - 1 tsp
- egg - 1 item
- raisins - 1/2 c
- plus 2 Tbsp - 2 c
- finely cut rhubarb - 2 c
How to make rhubarb cake:
Mix 1/2 cup sugar and rhubarb. Set aside. Blend butter, 1 1/2 cups sugar, egg and vanilla. Mix together flour, cinnamon, soda and salt. Add alternately to butter mixture with buttermilk. Add rhubarb mixture, coconut, nuts and raisins and mix together. Pour into a greased 7 x 12-inch pan. Bake at 350° for 45 minutes.Recipe categories: Desserts, Cakes, < 60 mins.
