Refrigerator rolls
Ingredients/Components
- sugar - 1 c
- milk - 1 qt
- flour - 9 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- warm water - 1/2 c
- oil or shortening - 1 c
- dry yeast - 2 pkg
How to make refrigerator rolls:
Combine milk, shortening, sugar and salt. Bring to a boil, then let cool to 125°. Sift together about 3 cups flour, baking powder and soda. Add yeast to 1/2 cup warm water. Add to milk mixture, then add the remaining flour. Mix well. Knead until it's easy to handle. My Mom always said, "Knead until it feels like a baby's bottom." Put in an oiled or buttered pan or bowl. Cover and let rise at room temperature until doubled in bulk. Punch down and refrigerate 3 hours to 10 days (covered tightly). Generally needs to be punched down every day or so.To make rolls, pinch off the amount you need for rolls. Place on baking sheet or bread pan. Cover and let rise (2 to 2 1/2 hours). Bake in 400° oven for 10 to 15 minutes.
To make whole wheat rolls, use 2 1/4 cups whole-wheat flour with 6 3/4 cups white flour.
