Ingredients/Components

  • sugar - 2 c
  • salt - 1 Tbsp
  • celery seed - 1 tsp
  • white vinegar - 1 c
  • mustard seed - 1 tsp
  • turmeric - 1 tsp
  • onion, cut up - 1 c
  • green pepper, cut up - 1 c
  • thinly sliced cucumbers - 1 c

How to make refrigerator pickles:

Put salt on cucumbers, onion and pepper. Let set 1 hour; drain well. Mix remaining ingredients and pour over vegetables. Place in jars and refrigerate. Ready to eat in 10 days, but flavor improves if left longer. Can be kept for weeks. Two and a half batches of syrup makes 1 gallon of pickles.
