Raw apple cake
Ingredients/Components
- shortening - 1/2 c
- sugar - 1 c
- ground raw apple
- vanilla - 1 tsp
- raisins - 1 c
- baking soda in 4 Tbsp - 2 tsp
- cinnamon - 1 tsp
- nutmeg - 1 tsp
- flour - 2 c
- nutmeats - 1 c
How to make raw apple cake:
Cream shortening and add sugar gradually, creaming well. Add ground apples, raisins, vanilla and soda mixture, stirring well. Sift dry ingredients together, add the nutmeats and combine with the first mixture stirring until well mixed. If too stiff add a little water. Pour into an oiled loaf pan. Bake 40 to 50 minutes in 350° oven.For Fruit Cake: Add 1 lb. candied fruit (flour first with some of the flour). I use the whole red and green cherries and pineapple chunks. They look pretty when sliced. Add 1/2 more walnuts or pecans and more raisins. Line baking pans with waxed paper. I use small loaf pans that are a good size for gifts. Bake a little longer if necessary. Test with toothpick.
This recipe has no citron which is what most people don't like about fruit cake. Also it is very moist.
