  • vanilla - 1 tsp
  • granulated sugar - 1/2 c
  • butter or margarine - 1/2 c
  • flour
  • cornstarch - 3 Tbsp
  • water
  • butter or margarine, softened - 1 c
  • brown sugar, packed - 1/3 c
  • ground cinnamon - 1/4 tsp
  • In large bowl with mixer at medium speed, beat butter, sugar and vanilla until fluffy

How to make blueberry crumb bars:

Prepare shortbread crust; preheat oven to 375°. In large bowl with mixer at medium speed, beat butter, sugar and vanilla until fluffy. Reduce speed to low, beat in flour just until combined; with fingers press dough firmly onto bottom of 15 x 10 1/2 jelly roll pan to form crust. Bake 20 minutes or until crust is golden brown. Cool slightly on wire rack. While crust bakes, prepare blueberry filling.Blueberry Filling:3 pints blueberries, (6 cups)1/2 c. granulated sugar3 Tbsp. cornstarch In 3 quart saucepan, combine blueberries, sugar, cornstarch and 2 Tbsp. water. Heat to boiling over medium high heat, stirring frequently. Boil 1 minute. Remove saucepan from heat.Streusel Topping:2/3 c. quick cooking oats, uncooked1/2 c. flour1/3 c. brown sugar, packed1/4 tsp. ground cinnamon1/2 c. butter or margarine In medium bowl, stir oats, flour, brown sugar and cinnamon. With pastry blender, cut in butter until mixture resembles coarse crumbs. Spread blueberry mixture evenly over cooled crust. Sprinkle streusel over blueberries. Bake 35 - 40 minutes or until blueberry mixture bubbles and top is lightly browned. Cool completely in pan on wire rack. When cool, cut lengthwise, then cut each strip crosswise into 6 bars. Makes 36 servings.
