- sugar
- eggs - 2 item
- salt - 1/2 tsp
- flour - 3 c
- baking powder
- nonfat milk - 1 c
- orange peel, grated - 2 tsp
- diet margarine - 1/3 c
- nuts, chopped fine - 1/2 c
- white raisins, chopped - 1 c
How to make raisin bread:
Preheat oven to 350°. Sift dry ingredients; add margarine, orange peel, eggs and nonfat milk. Mix until blended. Stir in nuts and raisins. Place in well-greased loaf pan (9 x 5 x 3-inch). Bake 1 hour and 15 minutes or until loaf tests done. Remove from pan and store 12 hours before slicing.From Recipes for Diabetics by Billie Little.
