Pumpkin scones
Ingredients/Components
- butter or margarine - 1/4 c
- salt - 1/4 tsp
- buttermilk - 2 Tbsp
- baking powder - 2 tsp
- baking soda - 1/2 tsp
- all-purpose flour - 2 c
- packed light brown sugar - 1/2 c
- ground cinnamon - 3/4 tsp
- ground nutmeg - 1/4 tsp
- ground allspice - 1/4 tsp
- egg, lightly beaten - 1 item
- golden raisins - 1/2 c
- egg white, beaten - 1 item
- solid pack pumpkin - 3/4 c
How to make pumpkin scones:
In large bowl, combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg and allspice. Mix well. Using pastry blender or 2 knives, cut in butter until mixture is crumbly. Stir in raisins; set aside.In small bowl, combine egg, pumpkin and buttermilk. Add liquid ingredients to dry ingredients; mix well.
On lightly floured surface, pat dough into a circle 3/4-inch thick. Using a 2-inch round cutter, cut into 14 scones. Place scones on an ungreased cookie sheet. Brush tops with egg white. Bake in preheated 400° oven for 10 to 12 minutes. Remove from cookie sheet; cool on wire rack. Makes 14 scones.
