Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour - 3/4 c
- nutmeg - 1 tsp
- eggs, beaten - 3 item
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar - 1 c
- ginger - 1 tsp
- softened butter - 1/4 c
- lemon juice - 1 tsp
How to make pumpkin roll:
Filling:6 oz. cream cheese1 c. powdered sugar1/4 c. softened butter1 tsp. vanilla Mix eggs, sugar, lemon juice and pumpkin in bowl. Add remaining ingredients, except filling. Bake in jelly roll pan at 350° for 15 minutes. Remove from oven. Turn onto dish towel sprinkled with powdered sugar. Roll up in dish towel, let cool completely (1 hour).Mix filling ingredients. Unroll dish towel and spread on filling. Sprinkle with pecans, if desired. Roll back up and cut into 1-inch slices.
