Ingredients/Components

  • sugar - 2 c
  • eggs - 4 item
  • oil - 1 c
  • plain flour - 2 c
  • cooked pumpkin - 2 c
  • cinnamon - 2 tsp
  • soda - 2 tsp
  • salt - 1/2 tsp
  • pkg
  • stick margarine, softened - 1 item
  • vanilla - 2 tsp
  • box powdered sugar - 1 lb
  • chopped pecans - 1/2 c

How to make pumpkin pound cake:

Icing:1 (8 oz.) pkg. cream cheese1 stick margarine, softened2 tsp. vanilla1 lb. box powdered sugar1/2 c. chopped pecans Mix sugar and eggs. Pour in oil. (I use Wesson oil.) Mix at medium speed until well blended (about 3 minutes). Combine flour with other ingredients. Add to pumpkin and mix at a lower speed until the batter is well blended. Pour into a well-greased tube pan. Bake at 350° for 1 hour; cool.

Icing: Mix cheese and margarine. Add vanilla, then sugar and blend until smooth. Ice cooled cake. Sprinkle with 1/2 cup chopped pecans.
