Ingredients/Components
- eggs - 3 item
- sugar - 1 c
- pumpkin - 2/3 c
- lemon juice - 1 tsp
- flour - 3/4 c
- baking powder - 1 tsp
- cinnamon - 2 tsp
- ginger - 1 tsp
- nutmeg - 1/2 tsp
- salt - 1/2 tsp
- chopped pecans - 1/4 c
- cream cheese
- powdered sugar - 1 c
- margarine - 1/4 c
- vanilla - 1/2 tsp
How to make pumpkin roll:
Filling:8 oz. cream cheese1 c. powdered sugar1/4 c. margarine1/2 tsp. vanilla Beat eggs for 5 minutes at high speed. Gradually blend in sugar. Add pumpkin and lemon juice. Sift together all dry ingredients. Fold into pumpkin mixture. Pour into greased 15 x 10 x 1-inch jelly roll pan. Sprinkle with chopped nuts. Bake at 375° for 15 minutes. Turn out on towel sprinkled with powdered sugar. Roll up from long side so there is a 15-inch long roll. Cool for 30 minutes.While cooling, blend cream cheese, sugar, margarine and vanilla until fluffy. Unroll cake and spread with filling. Reroll and refrigerate. Sprinkle with powdered sugar before serving. Slice in 1-inch slices.
