Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese - 8 oz
- eggs - 3 item
- vanilla - 1/2 tsp
- chopped pecans - 1 item
- salt - 1/2 tsp
- flour - 3/4 c
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar
- oleo - 5 Tbsp
- lemon juice - 1 tsp
How to make pumpkin cake roll:
Filling:1 c. powdered sugar5 Tbsp. oleo8 oz. cream cheese1/2 tsp. vanilla Beat eggs and sugar 5 minutes at high speed. Add pumpkin and lemon juice. Sift together dry ingredients and fold into pumpkin mixture. Spread in a greased 15 x 10 x 1-inch pan. Sprinkle with nuts. Bake at 375° for 15 minutes. Turn out onto a powdered sugar covered towel. Start at end, roll up. Let cool before adding filling.Filling: Beat ingredients until smooth. Unroll pumpkin cake. Spread with filling. Reroll and chill.
