  • sugar - 1 c
  • cinnamon - 2 tsp
  • cream cheese - 8 oz
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • chopped pecans - 1 item
  • salt - 1/2 tsp
  • flour - 3/4 c
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • powdered sugar
  • oleo - 5 Tbsp
  • lemon juice - 1 tsp

How to make pumpkin cake roll:

Filling:1 c. powdered sugar5 Tbsp. oleo8 oz. cream cheese1/2 tsp. vanilla Beat eggs and sugar 5 minutes at high speed. Add pumpkin and lemon juice. Sift together dry ingredients and fold into pumpkin mixture. Spread in a greased 15 x 10 x 1-inch pan. Sprinkle with nuts. Bake at 375° for 15 minutes. Turn out onto a powdered sugar covered towel. Start at end, roll up. Let cool before adding filling.

Filling: Beat ingredients until smooth. Unroll pumpkin cake. Spread with filling. Reroll and chill.
