Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese - 3 oz
- eggs - 3 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- flour - 3/4 c
- butter - 4 Tbsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar
- ginger - 1 tsp
- lemon juice - 1 tsp
- walnuts, chopped - 1 item
How to make pumpkin roll:
Filling:1 c. powdered sugar3 oz. cream cheese4 Tbsp. butter1/2 tsp. vanilla Beat eggs on high for 5 minutes. Add sugar, beating constantly. Stir in pumpkin and lemon juice; mix together next 5 ingredients. Fold into pumpkin mixture. Spread in greased, floured and wax papered pan (15 x 10-inch). Sprinkle chopped walnuts on top. Bake at 375° for 10 minutes. Turn out on towel. Roll cake and towel together. Let cool and unroll. Fill with filling and re-roll. Dust with powdered sugar; wrap well. Place in refrigerator.Filling: Combine sugar, cream cheese, butter and vanilla. Beat until smooth.
