Ingredients/Components
- sugar - 1 c
- eggs - 3 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour - 3/4 c
- nutmeg - 2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar
- ginger - 1 tsp
- lemon juice - 1 tsp
- block cream cheese - 14 oz
How to make pumpkin cake roll:
Filling:1 c. powdered sugar14 oz. block cream cheese1/2 tsp. vanilla Beat eggs at high speed for 3 minutes. Beat in sugar, pumpkin and lemon juice. Mix well. In a separate bowl blend together flour, baking powder, cinnamon, ginger, nutmeg and salt. Mix with moist ingredients. Pour mixture into a floured and greased pan, 13 x 9 x 2-inch. Top with nuts. Bake at 375° for 10 to 15 minutes or until brown. Turn out on a sheet of wax paper. Sprinkle with powdered sugar. Roll and refrigerate until cool.Filling: Beat everything together. Spread on cake and reroll. Refrigerate until served.
