  • sugar
  • eggs - 4 item
  • chopped pecans - 2/3 c
  • milk - 1/3 c
  • salt
  • water - 2/3 c
  • baking powder - 1/2 tsp
  • baking soda - 2 tsp
  • vinegar - 1 tsp
  • shortening - 2/3 c
  • unsifted all-purpose flour
  • raisins - 2/3 c
  • ground cloves - 1 tsp
  • ground cinnamon - 1 tsp
  • ground nutmeg - 1/2 tsp
  • can mashed pumpkin - 1 lb

How to make pumpkin bread:

Heat oven to 350°. Heavily grease and lightly flour two 9 x 5 x 3-inch loaf pans or three 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans.

In large bowl, using electric mixer, beat shortening and sugar together until light and fluffy. Add eggs and beat until combined. Add pumpkin, water and vinegar, mixed with milk. Beat at medium speed until combined. Mix flour with soda, salt, baking powder and spices. Gradually add mixture, beating at low speed. Stir in nuts and raisins.

Divide batter between pans evenly. Bake for about 70 minutes or until bread tests done with cake tester. Allow to cool 10 minutes in pans. Invert onto racks. Slices best next day. May be frozen.
