Spiced zucchini bread
Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- chopped pecans - 1/3 c
- salt - 1/2 tsp
- water - 1/3 c
- baking powder - 1/4 tsp
- baking soda - 1 tsp
- shortening - 1/3 c
- plus 2 Tbsp
- ground cloves - 1/2 tsp
- ground cinnamon - 1/2 tsp
- shredded zucchini - 1 c
How to make spiced zucchini bread:
Cream shortening at medium speed of an electric mixer; gradually add the sugar, beating well. Add the eggs, zucchini and water; mix thoroughly. Combine flour, soda, baking powder, salt and spices; add to creamed mixture, stirring well. Stir in pecans. Spoon batter into a 8 x 4 x 2-inch loaf pan greased only on bottom. Bake at 350° for 50 minutes or until a wooden pick inserted in center comes out clean.
