  • sugar
  • vegetable oil - 1 c
  • eggs - 3 item
  • flour - 2 c
  • baking soda - 1 tsp
  • cinnamon - 1 tsp
  • nutmeg - 1 tsp
  • allspice - 1 tsp
  • salt - 1/4 tsp
  • buttermilk - 1 c
  • vanilla - 1 tsp
  • chopped nuts - 1 c
  • cooked and seeded chopped prunes - 1 c
  • Sift flour with soda, cinnamon nutmeg, allspice and salt
  • white corn syrup - 1 Tbsp
  • margarine - 1/4 c

How to make prune cake:

Mix first 3 ingredients. Sift flour with soda, cinnamon nutmeg, allspice and salt. Add flour mixture alternately with buttermilk and vanilla. Then add nuts and prunes. Pour into greased and floured 13x9-inch pan and bake at 325° for 45 minutes or until tests done. While cake is still hot, ice with Buttermilk Icing.BUTTERMILK ICING:1 c. sugar1/2 c. buttermilk1/2 tsp. baking soda1 Tbsp. white corn syrup1/4 c. margarine1 tsp. vanilla Combine all ingredients except soda and vanilla in a heavy saucepan. Cook, stirring constantly and allow to cook to about soft ball stage. Add soda and vanilla and cook another 2 minutes. This will be quite syrupy. Cool in pan of ice water as you beat it until it thickens. Pour over hot cake. It will soak into cake and makes it good!
