Potatoes poupon
Ingredients/Components
- butter or margarine - 3 Tbsp
- heavy cream - 2 c
- onion, minced - 1/3 c
- almonds, sliced and toasted - 1/4 c
- basil leaves, chopped - 1 Tbsp
- Grey Poupon Dijon mustard - 1/2 c
- Gruyere cheese, shredded can substitute Swiss or a soft white cheese - 1 c
How to make potatoes poupon:
In medium saucepan over medium heat, cook onion in 1 tablespoon butter or margarine until tender. Stir in cream, mustard and remaining butter or margarine. Simmer 5 minutes. Reduce heat to low; add 1/2 cup cheese and basil and stir until cheese melts. In a greased 8 x 8 x 2-inch baking dish, alternately layer potatoes and cream sauce. On top, sprinkle with remaining cheese. Bake at 400° for 45 to 55 minutes or until potatoes are tender. Let stand 5 minutes. Garnish with almonds before serving.
